Ingredients
  

Rigatoni or penne
  • 1 lb rigatoni or penne Use your preferred tube pasta; rigatoni holds sauce well.
Sun-dried tomatoes
  • 0.5 cup sun-dried tomatoes in oil, chopped
Spinach
  • 3 cup baby spinach
Garlic
  • 4 clove garlic, minced
Coconut cream
  • 1 can (13.5 oz) full-fat coconut cream
Pasta water
  • 0.5 cup pasta water Measured from the reserved pasta cooking water; use as needed for sauce thickness.
Nutritional yeast
  • 3 tbsp nutritional yeast
Tomato paste
  • 2 tbsp tomato paste
Italian seasoning
  • 1 tsp Italian seasoning
Red pepper flakes
  • 0.25 tsp red pepper flakes
Sun-dried tomato oil
  • 2 tbsp sun-dried tomato oil
Basil for serving
  • 1 Fresh basil For serving.
Extra nutritional yeast for serving
  • 1 tbsp extra nutritional yeast Optional extra sprinkle for a parmesan-like finish.
Salt and pepper
  • 0.5 tsp Salt and pepper to taste

Method
 

Cook the pasta
  1. Bring a large pot of water to a boil and cook the rigatoni or penne until al dente, stirring occasionally so it stays separated. Reserve 1 cup pasta water before draining.
Make the sun-dried tomato vegan sauce
  1. Heat the sun-dried tomato oil in a skillet over medium heat until shimmering, then add the minced garlic and chopped sun-dried tomatoes. Sauté for 2 minutes until fragrant and slightly softened.
  2. Add the tomato paste and cook for 1 minute, stirring constantly to darken slightly and reduce any raw taste.
  3. Pour in the full-fat coconut cream and stir until smooth, then add Italian seasoning, red pepper flakes, and nutritional yeast. Simmer for 5 minutes, stirring occasionally, until the sauce looks creamy and cohesive.
Toss and finish
  1. Add the drained pasta to the skillet and toss to coat, loosening with reserved pasta water as needed to help the sauce cling. Add the baby spinach and toss until wilted.
  2. Season with salt and pepper to taste and top with fresh basil and additional nutritional yeast if using, so the pasta is finished with bright herb and a parmesan-style sprinkle.

Notes

Pro tip: add pasta water gradually (start with 1/2 cup) so the sauce turns silky without getting watery. Store leftovers in the refrigerator up to 4 days; reheat gently with a splash of water. Freezing is not recommended because coconut cream can change texture after thawing. For a lower-fat option, use light coconut milk instead of full-fat coconut cream and simmer a little longer to thicken.
