Ingredients
  

Beef chuck roast
  • 3.5 lb beef chuck roast
Onions and aromatics
  • 4 onions Large, thinly sliced
  • 4 garlic Minced
  • 1 cup dry white wine or beef broth Use either wine or broth
Braising liquid and seasonings
  • 3 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp fresh thyme
  • 2 bay leaves
Fats and cheese
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 2 cup Gruyere, shredded
Baguette topping
  • 8 slice baguette, toasted Toast until lightly crisp
Seasoning
  • 0.5 Salt and pepper to taste To taste; add during searing and/or braise

Method
 

Sear and braise
  1. Preheat oven to 325F, and heat olive oil in a Dutch oven until shimmering. Sear chuck roast until deeply browned on all sides, then remove it to a plate.
  2. Melt unsalted butter in the Dutch oven over medium-low heat. Add onions and cook 30-35 minutes, stirring occasionally, until deeply caramelized.
  3. Add minced garlic and cook 30 seconds until fragrant. Deglaze with white wine or beef broth, scraping up browned bits from the bottom of the pot.
  4. Stir in beef broth, Worcestershire sauce, fresh thyme, and bay leaves. Return the chuck roast to the pot, cover, and braise 3 to 3-1/2 hours until fall-apart tender.
Finish with cheese and toast
  1. Remove bay leaves from the braising liquid. Shred the beef in the broth until evenly distributed.
  2. Ladle the pot roast into bowls, and float toasted baguette on top. Sprinkle shredded Gruyere over the bowls.
  3. Broil 3-4 minutes until the cheese is golden and bubbly, then serve hot.

Notes

For the best caramelization, keep the onions at a steady medium-low heat and stir often so they soften before they brown. Refrigerate leftovers in a covered container for up to 4 days; reheat gently on the stovetop or in the oven until hot. Freezing is not recommended due to texture changes in onions and baguette, but you can freeze the braised beef and broth separately for up to 3 months. For a lower-sodium option, use low-sodium beef broth and reduce added salt to taste.
