Method
Activate the yeast
- Combine warm milk, yeast, and 1 tablespoon of the granulated sugar, then rest 5 minutes until foamy. You should see bubbles across the surface, indicating active yeast.
- Add the remaining granulated sugar, melted unsalted butter, eggs, and vanilla extract, then mix until smooth. Keep going until the mixture is uniform with no streaks.
Make and rise the dough
- Stir in all-purpose flour and salt to form a soft dough. The dough should pull together and feel tacky but not runny.
- Knead for 8 minutes until smooth. Visual cue: it should look elastic and slightly satiny.
- Place the dough in a greased bowl, cover, and rise for 1 hour until doubled. It should puff up noticeably and spring back slowly when pressed.
Caramelize the apple filling
- Cook the diced apples with unsalted butter, brown sugar, cinnamon, and nutmeg for 5-7 minutes until caramelized. The apples should soften and look glossy with syrupy edges.
- Cool the apple filling completely before assembling the rolls. Make sure it’s no longer warm to prevent the dough from becoming greasy.
Shape, cut, and second rise
- Roll the dough into a 12x18 inch rectangle. Aim for even thickness so the rolls bake uniformly.
- Spread the apple filling evenly over the dough. Leave a thin border at the far edge so it seals when rolled.
- Roll tightly into a log. Keep the roll snug so the swirls stay intact when cut.
- Cut the log into 12 rolls and arrange them in a greased 9x13 dish. Place cut sides up and leave some space for expansion.
- Cover and rise for 45 minutes. The rolls should look puffed and feel airy when gently touched.
Bake and glaze
- Bake at 375F for 22-25 minutes until golden. Visual cue: the tops should be browned with set, springy centers.
- Beat the cream cheese, powdered sugar, milk, and vanilla extract, then drizzle over warm rolls. The glaze should melt slightly and settle into the swirls.
Notes
Pro tip: cool the caramelized apple filling fully before spreading to keep the dough tender. Store covered in the refrigerator up to 4 days; rewarm in the microwave for 15-25 seconds. Freezing is yes—freeze baked rolls (glazed or unglazed) up to 2 months and thaw overnight in the fridge. For a dairy-light swap, use lactose-free cream cheese and lactose-free milk in the glaze.
