Method
Brown the beef
- Brown the ground beef in a large pot, then drain off excess fat to keep the soup from getting greasy.
Sauté aromatics
- Sauté the diced onion for 3 minutes, then add the minced garlic and cook for 1 minute, stirring until fragrant.
Simmer the soup
- Add both cans of Rotel diced tomatoes with green chiles, drained black beans, drained pinto beans, drained corn, taco seasoning, ranch dressing mix, and beef broth; stir to combine.
- Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes until the flavors deepen.
- Taste and season with additional salt if needed.
Serve
- Serve hot with shredded cheddar, sour cream, and tortilla chips, and top with cilantro and jalapeños if you like extra spice.
Notes
Pro tip: drain canned beans and corn well so the soup stays thick instead of watery. Store leftovers in the refrigerator up to 4 days; freeze up to 3 months (sour cream and chips are best added fresh). For a lighter option, use lean ground beef and reduced-fat cheddar/sour cream.
