Ingredients

Ranch Roasted Carrots
  • 2 lb carrots Peeled and cut into sticks.
  • 3 tbsp olive oil
  • 1 packet (1 oz) ranch seasoning
  • 0.25 cup grated Parmesan
  • 1 tbsp fresh dill or parsley, chopped Use dill or parsley.

Equipment

  • 1 sheet pan

Method

Roast the carrots
  1. Preheat oven to 425F and line a sheet pan with parchment.
  2. Toss carrot sticks with olive oil and ranch seasoning until evenly coated, so every piece is lightly covered.
  3. Spread the carrots in a single layer on the prepared sheet pan to help them brown at the edges.
  4. Roast for 20-25 minutes, tossing halfway through, until carrots are tender and browned at the edges.
  5. Sprinkle with grated Parmesan and chopped fresh dill or parsley, then serve warm.

Notes

For extra browning, don’t crowd the pan—use a second sheet pan if needed. Store leftovers in the refrigerator up to 3 days; reheat on a sheet pan in a 425F oven until hot (about 8-12 minutes). Freezing isn’t recommended because the carrots can soften too much after thawing. Dietary swap: use lactose-free Parmesan if you need to reduce dairy.
