Make the BBQ marinade and marinate
- Whisk together BBQ sauce, soy sauce, pineapple juice, honey, minced garlic, and smoked paprika until smooth and cohesive, then toss with pork cubes to coat evenly. Marinate for at least 30 minutes for better flavor penetration.
Prep skewers and grill
- Soak wooden skewers in water for 30 minutes to reduce burning on the grill. Meanwhile, thread pork, pineapple, red onion, and bell pepper alternately onto skewers.
- Preheat the grill to medium-high, then place skewers on the grate and cook 4–5 minutes per side, brushing with extra BBQ marinade. Grill until the pork is cooked through and the edges are charred, with caramelized pineapple starting to brown.
- Rest skewers for 3 minutes before serving, then serve with extra BBQ sauce on the side. Slice between cubes if desired so each skewer delivers charred pork and sticky glaze in every bite.
Notes
For the best char, don’t overcrowd the grill and brush with extra marinade during the turn so the glaze stays tacky. Refrigerate leftovers in a covered container up to 3 days; freezer: no (pork and pineapple texture softens after thawing). Dietary swap: for a gluten-free option, use gluten-free BBQ sauce and gluten-free soy sauce.
