Ingredients

frozen shredded hash browns
  • 30 oz frozen shredded hash browns thawed
sour cream
  • 2 cup sour cream
cream of chicken soup
  • 1 can (10.5 oz) cream of chicken soup
butter
  • 1 cup butter melted
mayonnaise
  • 0.25 cup mayonnaise
diced pimentos
  • 1 jar (4 oz) diced pimentos drained
shredded sharp cheddar
  • 2.5 cup shredded sharp cheddar divided
small onion
  • 0.5 small onion grated
salt
  • 1 tsp salt
black pepper
  • 0.5 tsp black pepper
cayenne pepper
  • 0.25 tsp cayenne pepper

Equipment

  • 1 sheet pan

Method

Prep and mix
  1. Preheat oven to 350F, then grease a 9x13-inch baking dish for easy release.
  2. In a mixing bowl, combine sour cream, cream of chicken soup, melted butter, mayonnaise, diced pimentos, 2 cups cheddar, grated onion, salt, black pepper, and cayenne.
  3. Fold in the thawed hash browns until evenly coated, with no dry shreds visible.
Bake and rest
  1. Spread the hash brown mixture into the prepared dish, then sprinkle the remaining cheddar evenly on top.
  2. Bake at 350F for 50-55 minutes until golden and bubbling at the edges, with the top visibly melted and browned.
  3. Rest for 10 minutes before serving so the casserole sets up and slices cleanly.

Notes

Pro tip: thaw and drain the hash browns well if they look wet, so the casserole bakes up creamy instead of watery. Store leftovers covered in the refrigerator for up to 4 days; reheat in the oven or microwave until hot. Freezing is not recommended because thawed hash browns can release excess moisture. For a lighter option, use reduced-fat sour cream and reduced-fat cheddar while keeping the bake time the same.
