Peas with Pancetta

Peas with pancetta is an Italian side dish where bright green sweet peas are simmered with chicken broth and finished with butter, lemon zest, and fresh mint. Crispy pancetta cubes are reserved for topping, so every bite gets a salty, golden crunch.

Ingredients

Peas with Pancetta
  • 4 oz pancetta diced
  • 1 tbsp olive oil
  • 1 shallot large, minced
  • 2 clove garlic minced
  • 1 lb frozen sweet peas
  • 0.25 cup chicken broth
  • 1 tbsp butter
  • 1 tsp lemon zest
  • salt and pepper to taste
  • 1 tbsp fresh mint or parsley chopped

Equipment

  • 1 cast iron skillet

Method

Cook the pancetta
  1. Heat olive oil in a cast iron skillet over medium heat, then cook the pancetta for 6-8 minutes until crisp and golden. For topping, remove half of the pancetta to a small dish.
Build the pea mixture
  1. Add the minced shallot to the skillet and cook for 2 minutes until softened. Stir in the minced garlic and cook for 30 seconds.
  2. Add frozen sweet peas and chicken broth, then cook for 4-5 minutes until the peas are bright green and hot. Keep the heat at a steady simmer and stir occasionally so everything heats evenly.
Finish and serve
  1. Stir in the butter and lemon zest, then season with salt and pepper to taste. Toss until the butter melts and lightly coats the peas.
  2. Top with the reserved pancetta and chopped fresh mint or parsley, then serve immediately. The reserved pancetta should sit on top so it stays crisp.

Notes

For the brightest green color, don’t overcook the peas—aim for hot peas with a vivid color after 4-5 minutes. Store leftovers in an airtight container in the refrigerator for up to 3 days; rewarm gently in a skillet so the peas don’t dry out. Freezing is not recommended because the peas can turn softer and less vibrant. If you want a lighter option, use turkey pancetta-style substitute if available.
