Ingredients

Goat cheese log
  • 10 oz goat cheese log Chilled
Cream cheese
  • 4 oz cream cheese Softened
Bacon
  • 6 slices bacon Cooked crisp and finely chopped
Pecans
  • 0.33 cup pecans Toasted and finely chopped
Dried cranberries
  • 0.25 cup dried cranberries Chopped
Fresh chives
  • 1 tbsp fresh chives Chopped
Honey
  • 2 tbsp hot honey or regular honey For drizzling
Crackers
  • 1 crackers For serving

Equipment

  • 1 stand mixer

Method

Make the cheese log
  1. Beat the goat cheese and cream cheese in a stand mixer until smooth and fully combined. Texture should look creamy with no visible lumps.
  2. Shape the mixture into a log. Aim for an even thickness so the coating adheres all around.
  3. Wrap the log in plastic wrap and chill for 30 minutes until firm. It should hold its shape when unwrapped.
Coat and assemble
  1. Combine the bacon, pecans, dried cranberries, and chives on a plate. Toss until evenly distributed so every bite has crunch and color.
  2. Roll the chilled log in the mixture, pressing to coat on all sides. Continue pressing until the coating fully covers the log surface.
  3. Transfer to a serving board and drizzle with honey. Let the honey fall in thin ribbons for a glossy finish.
  4. Serve with crackers. Slice one end to reveal the creamy white center.

Notes

Pro tip: chill the log until firm enough to hold a clean shape before rolling—this prevents toppings from sliding off. Store covered in the refrigerator up to 3 days; freezing is not recommended because the texture can turn grainy after thawing. For a lighter option, use reduced-fat cream cheese and keep the bacon portion the same.
