Ingredients

Goat cheese base
  • 8 oz goat cheese Soften for easier whipping.
  • 4 oz cream cheese Soften to blend smoothly.
  • 2 tbsp milk Use to lighten the spread to a smooth, fluffy texture.
Apricot-honey topping
  • 1 3.0? apricot preserves Warm briefly with honey until loose.
  • 2 tbsp honey Warms with apricot preserves to drizzle.
  • 0.33 cup dried apricots Finely chop for topping texture.
  • 2 tbsp pistachios Chop for crunch.
  • 1 tsp fresh thyme leaves Use leaves for a bright herb finish.
  • 1 flaky sea salt Add a pinch to balance sweetness.
Serving
  • 1 crackers or crostini Serve alongside the spread.

Method

Make the goat cheese base
  1. Beat goat cheese, cream cheese, and milk until light and smooth, using an electric mixer if needed for a fluffy texture.
  2. Transfer to a shallow serving bowl and spread into the bowl, making a swirl in the center to create a ribbon well for the topping.
Warm the apricot-honey
  1. Warm apricot preserves with honey for 20-30 seconds, stirring until loose and pourable.
  2. Spoon the apricot honey over the goat cheese swirl so the center is coated and the edges stay creamy.
Top and serve
  1. Top with finely chopped dried apricots, chopped pistachios, fresh thyme leaves, and a pinch of flaky sea salt for sweet, crunchy, herbal contrast.
  2. Serve immediately with crackers or crostini for dipping and scooping.

Notes

For the creamiest texture, soften both cheeses fully before mixing so they whip without lumps. Assemble and top right before serving for the best crunch; leftovers keep in the fridge up to 3 days, and the spread can be frozen up to 1 month (texture may loosen slightly on thaw). If you want a dairy-light option, use lactose-free cream cheese and goat cheese (or a lactose-free cultured dairy spread) to reduce lactose while keeping the same tangy flavor.
