  2. Stir wet ingredients into dry until just combined—batter should be thick and you should stop mixing as soon as no dry streaks remain.
Add zucchini and chocolate chips
  1. Fold in grated zucchini and mini chocolate chips until evenly distributed through the thick batter.
Portion and bake
  1. Divide batter evenly among the muffin cups, filling each about ¾ full for high muffin tops.
  2. Bake at 350°F for 18–20 minutes until a toothpick inserted in the center comes out with a few moist crumbs, with tops that look deep chocolate-brown and slightly crackled.
