Ingredients
  

Rice Krispies and butter base
  • 6 cup Rice Krispies cereal
  • 4 tbsp unsalted butter
  • 0.3333333333 cup molasses
  • 10 oz mini marshmallows
Gingerbread spice mix
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 0.5 tsp cloves
  • 0.25 tsp nutmeg
  • 0.25 tsp allspice
  • 1 tsp vanilla extract
Toppings
  • 0.5 cup white chocolate chips for drizzle
  • 1 flaky salt for topping

Method
 

Prep the pan
  1. Generously butter a 9x13 pan so the bars release cleanly after setting.
Melt and combine
  1. Melt butter in a large pot over medium-low heat, then add molasses and stir to combine.
  2. Add cinnamon, ginger, cloves, nutmeg, and allspice, then stir for 1 minute to bloom the spices.
  3. Add mini marshmallows and stir constantly until completely melted and smooth.
  4. Remove from heat and stir in vanilla extract, then add Rice Krispies cereal and stir until evenly coated.
Press, drizzle, and set
  1. Press the mixture firmly into the prepared pan and smooth the top so it bakes up evenly in bar form.
  2. Melt white chocolate and drizzle over the top, then sprinkle with flaky salt.
  3. Let set for 30 minutes before cutting so the bars hold their shape.

Notes

For best texture, press the mixture firmly but work quickly once it’s off the heat so the marshmallow doesn’t begin to cool and stiffen too early. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 7 days; freeze for up to 2 months (wrap tightly). For a lighter option, use reduced-sugar marshmallows to cut sweetness without changing the method.
