Garlic

Salt
  • 1 salt To taste; season at the end.
Black pepper
  • 1 pepper To taste; season at the end.

Equipment

  • 1 Dutch oven

Method

Brown and sauté
  1. Brown the Italian sausage slices in a large pot, then remove and set aside.
  2. Sauté the diced onion in the sausage fat for 4 minutes until softened, then add minced garlic and Italian seasoning and cook for 1 minute.
Simmer cauliflower
  1. Add the chicken broth and cauliflower florets, then simmer for 15–18 minutes until very tender.
Blend and make creamy base
  1. Blend about half the soup smooth, then stir in the heavy cream until combined.
Finish with kale and sausage
  1. Add the chopped kale, sliced sausage, red pepper flakes, and grated parmesan, then cook for 5 minutes until the kale wilts.
  2. Season with salt and pepper to taste, then serve hot.

Notes

For the creamiest texture, blend only about half the soup so you keep some cauliflower pieces for body. Store leftovers in the refrigerator up to 3 days; reheat gently until hot (don’t boil hard). Freezing is not recommended because dairy soups can separate. For a lighter option, use half-and-half instead of heavy cream and add it after blending.
