Prep and assemble
- Preheat the oven to 375F and grease a 24-cup mini muffin tin. This helps the puff pastry cups release cleanly after baking.
- Roll the puff pastry lightly and cut it into 24 squares, then press one square into each muffin cup. Fit the corners so the pastry forms a small cup shape.
- Place a cube of brie into each pastry cup. Distribute evenly so every bite has melted cheese.
- Top each cup with 1 teaspoon cranberry sauce. Spread it slightly so it sits on top of the brie without spilling over.
- Sprinkle the chopped pecans over each bite. Aim for an even layer so the crunch shows on top.
Bake and finish
- Bake at 375F for 13-15 minutes, until the pastry is puffed and golden and the brie is melted. Look for browning around the edges and a glossy, melted center.
- Cool for 5 minutes in the tin. This sets the cups enough to drizzle and garnish neatly.
- Drizzle with honey and garnish with fresh rosemary sprigs. Finish right before serving for the best aroma and presentation.
Notes
Pro tip: keep the brie cubes cold until you assemble so they melt without running—if your kitchen is warm, chill the filled tin for 5 minutes before baking. Store baked bites in an airtight container in the refrigerator for up to 3 days; rewarm at 325F for 5-7 minutes to re-crisp the pastry. Freezing is not recommended because puff pastry texture can soften after thawing. For a dairy-light option, swap brie for a dairy-free brie-style cheese made for melting.
