Method
Prep and preheat
- Preheat the oven to 350F and grease a 9x13-inch baking dish. Visual cue: the baking dish should be lightly coated so the topping releases easily.
Steam broccoli
- Steam the broccoli florets for 4-5 minutes until crisp-tender, then drain well. Visual cue: bright green florets should still have a slight bite.
Make the creamy filling
- Mix cream of mushroom soup, mayonnaise, eggs, finely diced onion, 1 1/2 cups cheddar, salt, and black pepper until smooth and combined. Visual cue: the mixture should look creamy and evenly speckled with onion.
- Fold the drained broccoli into the mixture and spread it into the greased baking dish. Visual cue: broccoli should be evenly distributed with no large dry gaps.
- Sprinkle the remaining cheddar over the top in an even layer. Visual cue: the surface should be fully covered for a melty, cheesy finish.
Add topping and bake
- Toss the crushed Ritz crackers with the melted butter. Visual cue: the crumbs should look evenly coated and slightly sandy.
- Sprinkle the buttered cracker crumbs over the casserole. Visual cue: you should see a uniform golden layer across the surface.
- Bake at 350F for 30-35 minutes until bubbly and golden. Visual cue: edges should bubble and the topping should look toasted.
Notes
For the cleanest texture, steam the broccoli only until crisp-tender, then drain thoroughly so the casserole doesn’t loosen. Store leftovers covered in the refrigerator for up to 3 days; freeze is not recommended due to the mayonnaise-based sauce. Dietary swap: use reduced-fat cheddar for a lighter version while keeping the same creamy bake.
