Ingredients

Apple cider
  • 1 cup apple cider
Cinnamon sticks
  • 2 cinnamon sticks
Star anise
  • 2 star anise
Whole cloves
  • 3 whole cloves
Brown sugar
  • 2 tbsp brown sugar
Prosecco
  • 1 bottle (750 ml) prosecco, chilled
Apple slices
  • 1 apple, thinly sliced
Cinnamon sugar for rims
  • 1 cinnamon sugar for the rims

Equipment

  • 1 Dutch oven

Method

Simmer spiced cider
  1. Add apple cider, cinnamon sticks, star anise, whole cloves, and brown sugar to a Dutch oven, then simmer at medium heat for 10 minutes, stirring once or twice. Keep the spices gently infusing so the cider turns noticeably fragrant.
Strain and chill
  1. Strain the spiced cider through a fine strainer and discard the spices. Chill the spiced cider completely until cold.
Build the drinks
  1. Rim 6 chilled champagne flutes with cinnamon sugar for the rims, pressing lightly to coat. The rim should look sandy and even all the way around.
  2. Pour 2 tablespoons of spiced cider into each flute, filling only the bottom. You should see a warm spiced layer before the bubbles go in.
  3. Top each flute with chilled prosecco and garnish with an apple slice, then serve immediately. The drink will be golden and bubbly with apple floating at the top.

Notes

For the cleanest flavor, fully chill the spiced cider before assembling so the bubbles stay lively longer. Store leftover spiced cider (unmixed with prosecco) in a sealed container in the refrigerator up to 3 days; freeze up to 2 months, then thaw and re-chill. To keep it alcohol-free, swap prosecco with chilled sparkling apple cider or nonalcoholic sparkling wine and still garnish with the apple slice.
