Brown and build the soup
- Brown the ground beef in a large pot and drain the fat.
- Sauté the diced onion and bell pepper for 4 minutes, then add the minced garlic and cook 1 minute.
- Stir in the taco seasoning, cumin, chili powder, and smoked paprika and cook for 1 minute to bloom the spices.
- Add the Rotel tomatoes, diced fire-roasted tomatoes, and beef broth, then add the cauliflower florets if using; bring the mixture to a boil.
Simmer and serve
- Simmer for 18–20 minutes, until the cauliflower is tender.
- Season with salt and black pepper, then serve hot with sour cream, shredded cheddar, avocado, jalapeños, and cilantro.
Notes
Pro tip: If you’re using cauliflower as the bean substitute, use small florets so they soften evenly within the 18–20 minute simmer. Refrigerate leftovers in a covered container for up to 4 days; freeze for up to 3 months (leave off sour cream/cheddar until reheating). For a lower-carb swap, choose no-sugar-added taco seasoning (or adjust homemade seasoning) to keep the carb count minimal.
