Toast the candied pecans
- Melt butter in a small skillet over medium heat, then add pecans and brown sugar. Stir to coat the nuts evenly and keep them from scorching.
- Toast for 3-4 minutes, stirring, until the pecans are fragrant and lightly candied. Spread onto parchment or a sheet pan to cool.
Assemble and serve
- Place the goat cheese log on a serving board. Keep it at room temperature for easier topping and a smoother spoonable finish.
- Spoon fig jam over the top, letting it run down the sides. Add enough so it visibly drapes along the log.
- Scatter candied pecans and rosemary over the jam. Make sure the nuts cover the top and some of the jam drips.
- Drizzle with honey and sprinkle with flaky sea salt. Serve immediately with crackers and sliced pears.
Notes
For the cleanest presentation, cool the pecans completely before topping so the jam stays thick and glossy instead of loosening. Store assembled leftovers in the refrigerator up to 2 days, though the crackers are best added fresh. Freezing isn’t recommended for the toppings, but you can freeze the goat cheese log separately. For a lighter option, choose a fig jam with less sugar and use less honey (start with 1 tsp) while keeping the rosemary and salt balance.
