Ingredients

Cranberry orange sauce
  • 12 oz fresh cranberries
  • 0.75 cup sugar
  • 1 cup fresh orange juice
  • 1 tbsp orange zest
  • 1 orange, peeled and segmented
  • 0.25 tsp salt

Equipment

  • 1 cast iron skillet

Method

Simmer the cranberry base
  1. Bring sugar and fresh orange juice to a boil in a saucepan over medium-high heat, stirring until the sugar dissolves and the mixture looks clear and glossy. Once it boils, immediately keep it at a steady simmer for 1-2 minutes before adding cranberries.
  2. Add fresh cranberries and salt, then return to a simmer and cook for 10 minutes, stirring occasionally, until most berries burst and the sauce thickens slightly and becomes ruby red.
Finish with orange
  1. Remove the saucepan from heat and stir in orange zest until it disperses and perfumes the sauce. Keep stirring for about 15 seconds so the zest doesn’t clump.
  2. Cool slightly for 5 minutes, then gently fold in the orange segments to keep them intact. Stop mixing as soon as the segments are evenly distributed.
Chill to serve
  1. Chill the cranberry orange sauce until serving, covered, so flavors meld and the texture sets. Let it cool completely in the refrigerator for at least 30 minutes if you can.

Notes

Pro tip: simmer until “most” berries pop—some whole berries keep the sauce lively and spoon-friendly. Refrigerate leftovers in a covered container for up to 5 days; freezer: yes, freeze in portions for up to 2 months and thaw overnight in the fridge. For a lighter option, reduce sugar by 1/4 cup and use an unflavored sugar substitute in equal sweetness to taste, since cranberry can remain tart even when chilled.
