Cranberry Sauce with Orange and Cinnamon

Cranberry sauce with orange and cinnamon is made by simmering fresh cranberries until they burst, then chilling into a thick, spiced condiment. The warm cinnamon sticks and bright orange zest give it a cozy, fragrant finish.

Ingredients

Cranberry sauce base
  • 0.75 lb fresh cranberries Use fresh for the best burst and texture.
  • 0.75 cup sugar
  • 0.75 cup orange juice
  • 0.25 cup water
  • 2 cinnamon sticks Leave in while it cools, then remove.
  • 0.25 tsp ground cinnamon
  • 1 tbsp orange zest Stir in off-heat so it stays bright.
  • 1 pinch salt

Equipment

  • 1 Dutch oven

Method

Cook the cranberry syrup
  1. Combine sugar, orange juice, water, cinnamon sticks, ground cinnamon, and salt in a saucepan, then bring to a boil over high heat until bubbling throughout (about 2 minutes). When it starts boiling, you should see active rolling bubbles across the surface.
  2. Add the cranberries, return to a boil, then reduce to a steady simmer and cook 10-12 minutes, stirring occasionally, until most berries burst and the mixture thickens. The sauce should look speckled with popped cranberries and coat the spoon slightly.
Finish and chill
  1. Remove from heat and stir in orange zest, mixing until evenly distributed through the sauce. You should see small orange flecks throughout the cranberry mixture.
  2. Leave the cinnamon sticks in as it cools for extra spice for about 10-15 minutes, then remove them. The aroma should be visibly stronger while cooling, then mellow once sticks are taken out.
  3. Chill the cranberry sauce before serving, at least 2 hours, until thick and spoonable. It should hold shape on a spoon and look jellied when cold.

Notes

Pro tip: keep the sauce at a true simmer (not a hard boil) so the cranberries burst but don’t turn grainy. Store in the refrigerator up to 5 days in a covered container; freeze up to 2 months if needed (thaw in the fridge overnight). For a lower-sugar option, replace sugar with a 1:1 baking sweetener and expect a slightly softer set.
