Equipment

  • 1 pot

Method

Boil and chill the eggs
  1. Place 12 large eggs in a pot, cover with cold water, and bring to a boil; cover, remove from heat, and let stand for 12 minutes.
  2. Chill the eggs in an ice bath for 10 minutes, then peel and halve lengthwise.
Make the creamy yolk filling
  1. Mash the yolks with Japanese mayonnaise, rice vinegar, soy sauce, and wasabi paste (optional) until smooth.
Fill and assemble
  1. Fold in half the crab (4 ounces total, finely chopped), then spoon the filling into the egg whites.
  2. Top each egg with the remaining crab, cucumber, and avocado.
Finish with California roll-style toppings
  1. Drizzle with spicy mayo made from sriracha mixed with mayonnaise, then sprinkle with toasted sesame seeds and thin nori strips.

Notes

For the smoothest filling, mash the yolks until no lumps remain before folding in crab. Keep assembled deviled eggs covered in the fridge for up to 2 days; they can be frozen only as a last resort (texture changes after thawing). For a lighter option, use light Japanese mayonnaise or light mayo in both the yolk base and the spicy mayo drizzle.
