Method
Prep the pan and preheat
- Preheat oven to 350F. Line a baking sheet with foil and parchment for easy cleanup and no sticking.
Wrap the smokies
- Wrap each smokie in a piece of thin-cut bacon and secure with a toothpick. Keep the bacon tight so it crisps evenly.
Coat with brown sugar mixture
- Mix brown sugar and cayenne pepper together in a bowl. Roll each wrapped smokie in the mixture until coated on all sides for a candied crust.
Bake until crisp and caramelized
- Arrange the coated smokies on the prepared pan. Drizzle with melted butter and sprinkle with any remaining sugar over the tops.
Finish and serve
- Bake for 30-35 minutes until bacon is crisp and sugar is bubbly and caramelized. Cool 5 minutes so the glaze sets, then serve warm.
Notes
For the crispiest bacon, don’t overcrowd the sheet pan—leave space for airflow. Store leftovers in the refrigerator up to 3 days in an airtight container; rewarm at 300F until hot and re-glazed. Freezing is not recommended because the bacon texture softens after thawing. For a lower-sodium option, choose reduced-sodium little smokies while keeping the coating the same.
