Ingredients

Apple cider mimosa components
  • 2 cup apple cider Chilled
  • 1 bottle (750 ml) champagne or prosecco Chilled
  • 2 tbsp sugar
  • 1 tsp ground cinnamon
  • 1 apple Thinly sliced
  • 1 cinnamon sticks for garnish For garnish

Method

Make the cinnamon sugar rim
  1. Combine sugar and ground cinnamon on a small plate, then stir until evenly mixed and visibly speckled.
  2. Wet the rims of the flutes with chilled apple cider, then dip and twist each rim in the cinnamon sugar to coat.
Assemble and garnish
  1. Fill each flute one third full with chilled apple cider.
  2. Top each flute with chilled champagne or prosecco.
  3. Garnish each drink with an apple slice and a cinnamon stick, then serve immediately.

Notes

For the neatest cinnamon rims, keep both the flutes and apple cider chilled before dipping so the coating sticks. Store any leftover apple cider mixture (without champagne) covered in the fridge up to 2 days; freeze cider only if you plan to thaw and use it for mixing later. For a lighter option, use sugar-free sparkling wine/prosecco and swap the sugar for a cinnamon-flavored zero-sugar sweetener.
